
Roast Broccoli and Chicken with feta cream
Serves 2-3
Cooking time: 20-30 minutes
Ingredients
1 pack Broccoli stems or 1 head broccoli
sliced lengthways 2-3 chicken breast fillets deboned skinless
Swiss chard Spinach
Juice of l lemon
1 cup milk
2 feta discs
1 tsp smoked paprika
1 tbps oregano (fresh or dried)
1 tsp chilli flakes
2 spring onions chopped
Olive oil
For the tomato salsa
1 cup cherry or exotic tomatoes
cut in half ½ red onion sliced Half
cucumber deseeded and chopped
1 cup chickpeas, drained
Salt and pepper
2 tbsp red wine
vinegar
1 tsp sugar
Method
Preheat the oven to 180 Mix together ½ cup olive oil, juice and zest of 1 lemon, smoked paprika, oregano, chilli flakes and spring onions. Season with salt and pepper. Place the chicken in a bowl and season with salt and pepper. Drizzle over some of the marinade mix and set aside for a few minutes. Toss the broccoli stems and swiss chard with the same mixture. Place the chicken and broccoli onto a baking tray and grill in the oven. Cook the swiss chard until wilted in a pan.Mix together the feta with about ¼ cup of milk and mash with a fork until a creamy texture starts to form.
Mix together the ingredients for the salsa Place the feta cream on the bottom of a serving dish, top with spinach, broccoli and grilled chicken, sliced.
Top with tomato and cucumber salsa and serve.
