Rigatoni Quattro Formaggi

250g Streaky wood smoked bacon
500g Rigatoni pasta
3 tablespoons Olive oil
1 small bunch Fresh oregano, leaves picked
75g Parmigiano Reggiano cheese, freshly grated, plus a little extra for topping
75g Gorgonzola cheese, rind removed and roughly broken into chunks
75g Mascarpone cheese
1 ball Fresh Fior Di Latte mozzarella cheese, drained and broken into small chunks
1 tub Fresh basil pesto
Freshlyground black pepper
Cook the bacon under a hot grill until crispy.
Cut into bite-sized pieces.
Cook the rigatoni according to the pack instructions, then drain in a colander and reserve a little of the cooking water.
Heat the olive oil in a heavy-based frying pan, add the oregano and fry for a minute until starting to crisp up.
Add the cooked pasta, along with a couple of spoonfuls of the reserved cooking water, the Parmigiano-Reggiano, Gorgonzola and mascarpone.
Toss over a medium heat and stir until most of the cheese has melted, adding a little more of the reserved cooking water if needed.
Add the bacon and basil pesto and season to taste.
Pour into a baking dish and top with the mozzarella and extra grated parmesan.
Place under a hot grill for a few minutes until the cheese has melted.
Serve garnished with fresh oregano leaves and freshly ground black pepper.
