Rhodes Quality Strawberry Jam Squares

250g cake flour
1t baking powder
30g sugar
225g salted butter
1 free range eggs
1t vanilla paste
1/4 cup water
460g Rhodes Quality Strawberry jam (in the jar)

Combine the dry ingredients together before adding the butter and crumbling in the butter until it resembles large breadcrumbs. Beat the egg and add it to the flour mixture with the vanilla. Slowly drizzle in the water while mixing to form a rough. Turn the dough out onto a lightly floured surface and gently knead until it comes together.

Divide the dough in half and wrap in plastic wrap before putting one in the fridge and the other in the freezer. After 30 minutes remove the dough from the fridge and roll out gently before adding to the base of a baking dish before pressing gently with your fingers to fill the space, ending up with a rough result is fine.

Spoon the Rhodes Quality jam over the base using the back of a spoon to smooth it out. Remove the dough from the freezer and grate over the jam before placing in an oven preheated to 180 to bake for 20 -25 minutes to until it turns golden brown.
