Quorn nuggets with creamy green dressing

Quorn nuggets with creamy green dressing

280g Quorn vegan nuggets, prepared as instructed

For the spicy green dressing
6T roughly chopped coriander
3cm piece of ginger, finely grated
1 clove garlic, roughly chopped
1 lemon or lime, zested and juiced
100g cashews, soaked overnight - reserve some of the water
1 green chilli, roughly chopped
1 avocado, flesh removed
Salt and freshly ground black pepper to taste

For the honey mustard dressing: blend together
100g almonds, soaked overnight - reserve some of the water
1T raw honey
1T whole grain mustard
1T dijon mustard
Salt and freshly ground black pepper to taste

Place the vegan nuggets on a baking tray and cook in the oven as instructed. For the dressing add the coriander, ginger, garlic and lemon zest to a blender along with the juice of the lemon, cashews, chilli, avocado and season lightly with salt and freshly ground black pepper. Blend to form a smooth dipping sauce. If the mixture is too thick add some of the water used for soaking the cashews.
Serve the nuggets with the green dressing and the honey mustard dressing which was simply made by blending all the ingredients together.
