Quorn hot and spicy burgers

Quorn hot and spicy burgers

For 2 burgers

2 Quorn Vegan, hot and spicy burgers
Salt and freshly ground black pepper to taste
4 large brown mushrooms, to replace the buns of the burger
Crisp lettuce, to garnish
1 ripe tomato cut into thick slices
Thinly sliced red onion rings

For the spicy guacamole:
1 ripe avocado, flesh removed
1 spring onion, thinly sliced
1/2 roasted red pepper, cut into chunks
1 red chilli, finely chopped
1 lime, zested and juiced
Salt and freshly ground black pepper to taste

Season the patties lightly before placing them in the oven cooking according to the instructions provided on the box. While the patties are cooking heat a griddle pan over a high heat. Add the mushrooms to the griddle pan and grill tuning over every few minutes to ensure even cooking.
Once the mushrooms are well charred season them lightly with salt and freshly ground black pepper and set aside.
Prepare your spicy guacamole by adding the flesh of the avo to mixing bowl along with the spring onions, roasted red pepper, chilli, lime zest and juice as well as some seasoning. Smash together before adding to the base of each burger, which is a mushroom, with its cap facing down.
Add some lettuce, tomato and onion before adding the patties followed by some more guacamole, finish with another mushroom to form the shape of the burger. Serve immediately
