Quorn Chicken curry

Quorn Chicken curry

2 T oil
X1 onion, chopped
2 cloves garlic, crushed
1 thumb size ginger, grated
X1 300g Quorn soy free, meat-free Chicken style pieces
2 potatoes, parboiled and cubed
1 T roasted masala
1 T curry powder
1 cinnamon stick
1 tsp chilli powder or chilli flakes
1 tomato, chopped
Salt

Saute the chopped onion, garlic and ginger in the heated oil. Add in the spices and allow to cook for a minute. Add in the Quorn chicken style pieces, cubed potatoes and the chopped tomatoes. Give it a good mix and add in a dash of water if it's too dry. Season with salt and allow the curry to simmer for about 10 minutes. The Quorn pieces won't take long to cook.

Serve with cooked rice or rotis, a garnish of fresh coriander and sambal.
