Pulled lamb grilled cheese
with mint jelly

100g Oak smoked Stanford, grated
50g Grated mozzarella
Pre-heat oven to 180°C. Remove sleeve and wrapping. Place the foil tray in the centre of the oven on a baking sheet and bake for 50-60 minutes, uncovered. Allow the roast to stand for 10 minutes before pulling the meat.
Unwrap the baguette and pull the bread slices apart. Spread mint jelly on one slice of the bread, top with pulled lamb and a mixture of the grated cheese. Sandwich together with another slice of bread and toast in a medium heated pan until golden and repeat on the other side.
