Potato latkes with smoked salmon

3 large Nicola Mediterranean potatoes
Salt and freshly ground black pepper
2T butter
2T canola oil
1/2 cup sour cream
150g smoked salmon ribbons
Chives to garnish

Grate the potatoes with the skins on. Add all the potatoes to a colander and press gently, pressing out any excess water.
Season with salt and pepper and mix through the grated potato while still in the colander. Allow the excess moisture to seep out the potatoes. After about 15 minutes press out the excess water again.
Heat the butter and oil together in a pan over low heat. Add the potatoes to the pan pressing down to compact the potatoes before covering with baking paper then weigh down the potatoes by covering with a plate pressing down on the potatoes.
After about 10 minutes of slow cooking over a low heat remove the plate and baking paper and using a spatula carefully lift one end of the latke to see if it has browned and become crispy. If not return the baking paper and plate and cook for another 5 minutes before checking again.
Once the latke is perfectly golden and crisp, remove the baking paper and only cover with the plate. Carefully flip the pan while holding your hand on the plate, turning the latke onto the plate.
Add more butter and oil to the pan, then carefully return the latke to the pan, with the uncooked side now making contact with the pan. Cover again with the baking paper and plate and cook for another 10 minutes or until that side is browned and crisp.
Remove the crispy latke from the pan and place on a serving dish or wooden board, allowing it to cool slightly before dolloping the sour cream, add the cream while the latke is too hot will cause the sour cream to melt.
Add the ribbons of salmon and finish with a scattering of chives. Cut into pizza style slices and serve.
