Portuguese style Feijoada

Half cup chorizo, sliced

1 onion, thinly sliced
3 cloves garlic, crushed
3 carrots, peeled and chopped
x1 400g pork fillet, cubed
x1 tin red kidney beans
x1 tin WW chopped tomatoes
2 bay leaves
2 cups dry white wine or stock
Salt & Pepper

In a large pot, Add the chorizo and allow to cook until the oils start coming out of the chorizo. Add in the sliced onion, garlic and carrots. Saute for a few minutes. Add in the cubed pork fillet and mix well.
Add in the red kidney beans, chopped tomatoes, bay leaves and wine/stock. Season generously with salt and pepper and allow the Feijoada to cook until the pork fillet is tender. Serve warm.
