Poached fish with creamy spinach

Cooking time: 35 minutes
Serves 2
 
INGREDIENTS
2 fillets (sustainably sourced fish)
1 cup Clover Fresh milk
1 tsp fennel seeds
1 tbsp capers
1tsp lemon juice
½ tbsp flour
2 tbsp butter
2 cups spinach, roughly chopped
salt and pepper to taste
 
METHOD
In a small saucepan, on medium heat, add the fennel seeds and allow to toast for a few seconds. Add milk and bring to a boil before reducing to a simmer until bubbles are barely breaking the surface. Add the fish fillets and poach for 15-20 min until fully cooked.
Once cooked, set aside.
In a pan, on medium heat, add 1 tbsp butter and melt before adding the spinach. Sauté the spinach for 15min and season. Add the flour to the spinach and stir through and cook out the flour for about 3 minutes before slowly adding the milk used to poach the fish. Add a little at a time until the mixture reaches a creamy consistency.
In another small pan, on high heat, add the remaining butter followed by the capers and fry for about 2min before adding the lemon juice.
Serve the fish on the bed of creamy spinach and spoon the caper sauce onto the fish and ENJOY!
