Pizza Blanco with Clover cheese

For the cheese sauce
4T butter
3T cake flour
2 cups Clover full cream milk
100g Clover mature cheddar, grated
100g Clover Tussers, grated
salt and freshly ground black pepper to taste
¼ t freshly ground nutmeg
1kg prepared bread/pizza

For the topping
4 spring onion stalks, thinly sliced
300g Baby marrows, thinly sliced using a veggie peeler
1 cup fresh basil pizza
fresh basil to garnish
Olive pride olive oil for drizzling

Heat the oven on a grill setting. Add the butter to a pot over a medium heat and melt before adding the flour and mixing through for about a minute before slowly adding the milk, whisking continuously to prevent any lumps forming. Once a smooth sauce is formed begin adding the cheese gradually still whisking until all the cheese has been added and a smooth cheese sauce has formed.
Add the salt, pepper and nutmeg.
Divide the dough into 2 or 3 evenly sized dough balls (depending on the size pizza you’d like) before rolling out into pizza rounds. Spread the cheese sauce over the base then sprinkle over the spring onion. Begin rolling the marrow into spirals the resemble roses and add them to the pizza until the pizza is completely covered with them. This might take some time but the results are worth it. Place the pizza in the oven to cook for about 10 minuntes or until crisp underneath and the topping are golden. Drizzle over the pesto and garnish with the extra basil leaves to garnish.
