Peppermint crisp Amasi waffles

Peppermint Crisp Amasi Waffles

Waffle batter:
4 large eggs, beaten

250g self-raining flour
2 cup Clover Amasi
1 tin caramel treat
2x 49g peppermint crisp chocolate bars, crushed
4 Tbsp brown sugar
6 Tbsp Olive Pride oil blend
40g corn flour
10 ml vanilla paste

Sauce:
½ tin caramel treat

5ml – 10ml Maldon salt
1 cup Clover cream

Toppings:
2x49g pepper mint crisp chocolate, chopped/ dark chocolate chips

80g soft toffees, chopped
½ cup Clover cream whipped

For the batter combine all the ingredients in a large mixing bowl and mix until smooth. Heat a waffle iron until hot. Add 1 cup of the batter , close the waffle iron and cook until done and lightly golden brown. Continue until all the batter is done
For the sauce heat all the ingredients in a saucepan over low heat until well incorporated and melted. If it thickens on standing thin it out with a few tablespoons of cream.
To assemble stack two halves of waffles on top of each other. Top with a generous dollop of whipped cream, a good drizzle of the sauce and a handful of chocolate and toffee sprinkle. Garnish with mint and enjoy
