Peanut butter choc chip breakfast cookies

Peanut butter choc chip breakfast cookies

2 cups rolled oats
2Tbsp chia seeds
1tsp all spice
½ cup brown sugar/ coconut sugar / ¼ cup honey
2 overripe bananas, mashed
¼ cup Authentikos Double cream sweetened
2Tbsp crunchy peanut butter, melted
1Tbsp maple syrup
½ cup dark chocolate chips
½ banana, thinly sliced

Preheat oven to 180C. Line and grease a baking tray.
In a large mixing bowl combine the oats, chia seeds, all spice and sugar. In another mixing bowl combine the mashed bananas, yoghurt, peanut butter and syrup until smooth before folding through the oat mixture until fully incorporated. Add the chocolate chips.
Allow the mixture to sit in the fridge for 10-15 minutes.
Scoop about 2 tablespoons of the mixture onto the prepared tray and firmly shape into a cookie. Repeat this process until the mixture is done. Add a slice of banana ontop of each cookie and bake for 20-25 minutes until golden brown and the banana caramelized.
Remove from oven and allow to cool on the tray for 5 minutes before transferring to a cooling wrack. Allow to cool completely before digging in!
