One mug crumpets

Preparation time: 5 minutes
Cooking time: 15 minutes
 
These are the easiest crumpet to make – you don’t need a scale to weigh your ingredients. All you need is a cup or a mug. As long as you use the same cup for measuring both the flour and the milk! Easy peasy! 
 
Basic Batter Ingredients
1 large egg
1 mug or cup self-rising flour
1 mug or cup Clover Fresh milk
big pinch salt
 
For frying
butter, for frying (for a healthier version use non-stick spray or pan)
 
Cooking Instruction
Crack the egg into a large mixing bowl.
Add the flour, milk and salt.
Whisk everything together until you have a lovely, smooth batter.
Put a large non-stick frying pan on a medium heat and after a minute or so, add a knob of butter. 
Carefully tilt the pan to spread the butter out evenly.
Add a few big spoons of batter to the pan, leaving enough space between each one so they have room to spread out slightly – each spoon will make one crumpet, and you’ll need to cook them in batches.
Cook the crumpets for 1 to 2 minutes, or until little bubbles appear on the surface and the bases are golden, then use a fish slice to carefully flip them over.
When the crumpets are golden on both sides transfer to plate and enjoy. 
 
Blueberry and honey one mug crumpets
X 1 Basic One mug crumpets batter (recipe above)
200 g fresh blueberries
 
For serving
Clover Classic yoghurt based dairy snack
Honey 
 
Fold the blueberries through the batter and fry as above. Serve the crumpets straight away, topped with a dollop of Clover Classic and honey. 
 
Bacon and cheese one mug crumpets
X 1 Basic One mug crumpets batter (recipe above)
150 g fried bacon bits
100 g grated cheddar 
 
For serving
Maple syrup
Fold the bacon and cheese through the batter and fry as above. Serve the crumpets straight away with a drizzle of maple syrup.
