Olive Pride Extra Spicy Fried Chicken

900g chicken thigh fillets
3/4 cup Sriracha sauce
¼ cup honey
2Tbsp rice wine vinegar
1Tbsp lime juice
1 cup cake flour
1tbsp Durban curry powder
1Tbsp garlic powder
1Tbsp chili flakes
1Tbsp smoked paprika
2tsp salt
2tsp pepper
3-4 eggs, beaten
2-3 cups panko crumbs
Olive Pride oil for deep frying

4 cups flour
1 packet Active dry yeast
2tsp sugar
1tsp salt
2tsp oil
2 – 2 ½ cups warm water
Olive Pride oil for deep frying

2Tbsp oil
1 red onion, chopped
2 garlic cloves, chopped
1 red chili, chopped
4 tomatoes, grated
30ml curry powder
1Tbsp tomato paste
2Tbsp sugar
1 tin baked beans (optional)
Salt & pepper

For the fried chicken:
Place the chicken in a large bowl and season with salt and pepper. In another bowl combine the Sriracha sauce, honey, vinegar and lime juice. Pour the Sriracha mixture over the chicken and mix to coat all the chicken, allow to marinade for 30 minutes.
In a pot start heating the oil. Combine the flour, curry powder, garlic, chilli flakes, smoked paprika, salt and pepper in a bowl. Coat the chicken wings with the flour, dip in the eggs and coat in the panko crumbs. Coat with the egg and the panko crumbs again.
Fry until golden brown and crispy and drain the excess oil by placing the chicken on some paper towel.

For the Vetkoek:
In a large mixing bowl combine the flour, yeast, sugar and salt. Add the oil and gradually start adding the water until a stiff dough forms. Knead until well combined, smooth and elastic.
Place in a lightly oiled bowl, cover with plastic and allow to rise in a warm place for 30-45minutes until double in size. Portion into 30g balls deep fry on each side until golden brown and cooked through.

For the Chakalaka:
In a saucepan heat the oil. Fry the onions, chilies, garlic, green pepper and curry powder for 5 minutes until translucent and fragrant. Stir in the tomatoes and bring to the boil. Add the tomato paste and the reduce the heat to a simmer .Add the sugar and stir in the baked beans. Season to taste.
Serve the fired chicken the vetkoek and spicy chakalaka
