Nulaid Perfect Custard

6 free-range Nulaid egg yolks
1/2 cup sugar
2 cups of milk
1t vanilla paste, or extract.

Over a double boiler: begin whisking the egg yolks and sugar until the sugar has dissolved and the mixture has become light and fluffy.
Heat the milk and vanilla together in a pot until just simmering.
Add some of the simmering milk to the egg mixture and mix to combine, do this twice before pouring all the egg mixture into the simmering milk.
Continue stirring until the mixture begins to thicken, stir until the custard coats the back of a spoon and you’re able to run your finger through the custard with it being thick enough to hold its shape.
