Nulaid Mini Breakfast Tarts

You Need:
6 Nulaid eggs
1 1/2 cups milk
Salt and freshly ground black pepper to taste

For the fillings
100g cherry tomatoes, cut into chunks
Handful of basil leaves, thinly sliced

50g cheddar cheese, cut into cubes
4 slices of breakfast ham, roughly chopped

2 spring onions thinly sliced
Green and red pepper, roughly chopped
50g Smoked sausage or viennas, roughly chopped

Grated cheddar cheese to top, optional

Simply beat together the milk and Nulaid eggs and season before setting aside. In a muffin tray add your favorite fillings before pouring over the egg mixture, sprinkle over the cheese and place in an oven preheated to 200C. Cook for 6-8 minutes before sprinkling with chipped chives and serving.
