Nolac Summer Carbonara

400g linguine pasta, cooked to packet instructions
1 finely chopped onion
250g streaky bacon, chopped
200g Tenderstem broccoli
100g fresh peas
2 whole eggs and 2 egg yolks, beaten
1 c Clover Nolac milk
Handful fresh mint
 

  1. In a large pan, fry the bacon until the fat has rendered. Add the onion and cook until soft.
  2. Add the peas and broccoli and toss through. Cook for 5 minutes.  Add the cooked pasta

 Stir the beaten egg into the pasta mixture, along with the Nolac milk. Season well with salt, pepper and fresh mint. Serve while still warm.
