Nectarine puff pastry bakes

Nectarine puff pastry bakes

Recipe by: Clem Pedro

3/4 cup brown sugar
4t ground cinnamon
150g butter, cut into small cubes
5-6 Woolies flavourburst white nectarines, halved with the stone removed
500g Woolies All-butter puff pastry
Vanilla ice cream to top

Scatter the brown sugar over a baking sheet, tin or pan that can be placed in the oven. Sprinkle over the cinnamon and dot with the butter.
Cut the pastry into squares, large enough to be stretched over the round side of the nectarine, with the cut side still open.
Place the fruit cut side down over the sugary butter mixture. Preheat you oven to 180C.
Add the tray to the oven and bake for about 25 minutes or until the pastry is perfectly golden and crisp and the fruit is soft and tender.
Carefully remove from the dish and place the fruit cut side up, spooning over any excess caramel that formed from the sugar and butter. Add a scoop of ice cream to the baked fruit and serve. This is just as delicious served at room temperature.
