Mozzarella and Spring Onion Chicken Fillets with Sweet Potato and minted peas

1x Easy to cook chicken fillets with mozzarella and spring onion (avg 600g)
Pre-heat oven to 180° C. Remove sleeve and outer packaging. Place the product with foil tray in centre of oven on a baking sheet. Bake uncovered for 20 – 30 minutes. Remove from the oven and allow to stand for 5 minutes before serving.
For the Potatoes
4 Medium sweet potatoes
1 cup chicken Stock
½ lemon, juice and zest
100g butter
Thinly slice the sweet potatoes into rounds then arrange in a deep baking dish. Pour over the chicken stock, the lemon juice and zest, dot with butter and season. Bake for 40mins at 180’c.
For the Peas
300g Woolworths Frozen Mint flavoured Peas
1 lemon, juice and zest
Handful fresh mint
Cook the peas in salted boiling water for 5mins. Combine with the lemon zest and juice in a food processor and blitz until smooth. Season to taste and finish with extra fresh mint leaves.
