MOTHER'S DAY BREAKFAST TARTS
250g streaky bacon
500g all butter puff pastry
1 cup basil pesto
3 ripe tomatoes, cut into slices
12 medium sized free range eggs
Salt and freshly ground black pepper to taste
Freshly grated parmesan
Spray a muffin tin with non-stick kitchen spray before lining it with some puff pastry to create individual mini tarts. Add some pesto to the base before adding a slice of tomato. Season lightly then add the egg before placing in an oven preheated to 200C. Once the egg looks like its almost done add a sprinkle of parmesan and place back in the oven until the cheese is golden and crisp.
