
Moroccan Lamb loin chops
Serves: 4-8

Ingredients
1.5kg Lamb loin chops
1 tub Moroccan Rub seasoning
1 cup olive oil
Method
Brush the lamb chops lightly with the olive oil then sprinkle generously with the Moroccan spice rub. Skewer the chops with metal skewers then cook on high heat on a griddle pan to your doneness.
Serve hot.
Tomato and avo salsa
Serves: 4-6
Prep time: 10 min
Ingredients
2 avocados, cubed
2 cups multicoloured cherry tomatoes, quartered
¼ cup balsamic vinegar
¼ cup sweet chilli sauce
1 red onion, sliced into rings
salt and pepper to tatse
Method
Mix together all the ingredients and season with salt and pepper.
Serve.
