
Milk Chocolate Fudge with Speckled Eggs

1 1/2 cups SELATI white sugar
2/3 cup MILK POWDER
2 tablespoons butter
a pinch of salt
2 cups miniature marshmallows
A slab and a half of milk chocolate, chopped up.
1 teaspoon vanilla extract
1 1/2 cups speckled eggs
Start by lining a 20cm x 20cm brownie pan with grease-proof paper.
In a medium sized pot, combine the sugar, milk powder, butter and salt. Slowly bring these ingredients up to the boil. Stir for the first 2 minutes or so until everything is nicely combined. Once you have reached a rolling boil, leave the pot to boil for 4-5 minutes.
Remove the fudge from the heat and let the bubbling subside. Continue to stir in the chocolate Marshmallows & vanilla essence. Stir until the marshmallows are completely melted. Fold in 1/2 a cup of speckled eggs.
Pour the fudge into the prepared baking tin and pour the remaining speckled eggs over the top, pressing them lightly into the surface of the fudge.
Leave the fudge to cool completely. Once cool, cut into the desired size and enjoy.
