Sticky apricot marinade
2T medium heat curry powder
1 red chilli, thinly sliced
3 cloves garlic, finely chopped
1/4 cup soy sauce
2t thyme
1 lemon, zested
5T apricot jam

Smoky Shisa Nyama marinade
2T smoked paprika
1T corinder seeds
1T garlic flakes
1/2 cup apple cider vinegar
1 cup tomato puree
1/2 cup brown sugar
2T Worcestershire sauce
1T liquid smoke extract
Fresh thyme, about 1t of the leaves


Serve with ribeye steak and prepared Woolies salad

For the sticky apricot marinade:
Combine the curry powder, chilli, garlic flakes, soy sauce thyme and lemon zest in a pan along with the apricot jam. simmer gently until the jam has melted and the marinade comes together.
Prepare the smoky shisa nyama marinade: Add the paprika, coriander seeds and garlic flakes to a pestle and mortar and pound until a rough spice mix is formed. Toast in a pan until fragrant before adding apple cider vinegar, tomato puree, brown sugar and Worcestershire sauce. Bring to a simmer and cook for 5 minutes with the thyme added.
Prepare a steak and finish with a drizzle of of the smoky marinade and serve with a prepared woolies salad
