Marinated Chicken Kebabs

Honey and mustard marinated chicken thigh kebabs and barbecue marinated chicken kebabs with homemade flatbread and pickles

For the homemade pickles:
2 carrots, peeled and roughly chopped
1 red onion, cut into petals
1/4 cauliflower, cut into small florets
3 jalapeños, sliced into rings
3 radished, thinly sliced
8 dried or fresh curry leaves
1T Mustard seeds
2t cumin seeds
2t coriander seeds
4T maple syrup
1 cup apple cider vinegar
3T tabasco chipotle

1 kg prepared bread dough, equally divided into 10 balls
650g Honey and mustard marinated chicken thigh kebabs
650g Barbecue marinated chicken kebabs
1 cups plain yoghurt
Coriander leaves to garnish

Prepare all the veggies and add to a mixing bowl. In a pot combine the spices along with the apple cider vinegar and maple syrup. Bring to a simmer before still adding the veggies. Add the chipotle tabasco before turning off the heat and allowing the veggies to cool in the pickling liquid.

Roll the dough out into rugby ball shaped breads. Heat a large pan or griddle pan over a high heat before adding the flat bread and cooking until toasted. Turn over and cook the other side in the same manner. Continue doing this with the other bread, wrapping them foil so the don’t dry out.

Add the kebabs to the griddle pan and prepare grilling it until evenly grilled and charred.
Serve the kebabs with the flatbreads and pickles before topping with yoghurt and fresh coriander.
