Maple glazed doughnuts with Clover

Maple glazed doughnuts with Clover

Dough:
80ml milk
120ml Clover cream
5g instant yeast
2 eggs
500g cake flour
50g Clover salted butter
50g castor sugar
25g honey
1 cup crispy bacon bits, chopped
2 egg yolks
25ml vodka/ water

Maple glaze:
1 cup icing sugar
1tsp cinnamon
2Tbsp maple syrup
2-3tsp Clover cream

For the dough:In a bowl of a stand mixer or mixing bowl combine the milk, cream and yeast. Mix until the yeast has dissolved.
Add the eggs, flour, butter, sugar, honey and bacon. Knead with a dough hook or by hand for 8-10 minutes until you have a soft, smooth dough.
Place the dough in a lightly oiled bowl, cover with cling wrap and allow to rest in a warm place for 15 minutes.
Knead in the egg yolks and vodka and allow to proof in a warm place until the has doubled in size.

For the Glaze :While the dough is proofing prepare the glaze by combining all the ingredients until smooth and lump free. Cover and set aside.
Gently knock down the dough. Using a round cooking cutter or a cup, cut out rounds from the dough and fry in 180c oil until beautifully golden brown and cooked.
Allow to cool and dip in the glaze before serving.
