Maple and bacon jam glazed gammon

Maple and bacon jam glazed gammon

For the bacon jam:
500g bacon chunks
1 red onion, finely chopped
4 cloves of garlic
2t paprika
1/2 cup brown sugar
1/4 cup maple syrup
Double freshly brewed espresso
3T Tabasco chipotle
3/4 cup apple cider vinegar
Salt to taste
1.5kg - 2kg gammon, prepared as instructed.
1 cup maple
1 freshly brewed espresso
4T tabasco

For the bacon jam:
Add the bacon to a cold pan along with 1/4 cup of water. Heat over a medium heat allowing the fat to render out. Cook until most of the water has dissolved. Add the onions and season lightly before slowly cook until just soft. Add the garlic, paprika, brown sugar, maple and coffee before reducing the heat to low and bringing to a simmer. Add the chipotle tabasco and apple cider vinegar before stirring and allowing to simmer gently for about 15 minutes with 1/4 cup of water.

Before the mixture becomes jammy add it to a blender while still hot and pulse until the bacon breaks down and a rough jam is formed.
Remove the fat cap from the gammon and cut diamond shaped scoring into the fat. Place in an over preheated to 200’C until the fat begins to brown, about 15 minutes.
Carefully remove the gammon from the oven and glaze with the first coating of maple syrup which has been mixed with the coffee and tabasco. Continue coating the gammon every 10 minutes until the gammon is sweet and sticky.
Cover the gammon with the bacon jam and give it its final 15 minute in the oven before letting cool slightly and carving, serving with extra bacon jam.
