Malva in a mug with vanilla ice cream

Woolies Malva kit
1 free range egg
2T smooth apricot jam
65g unsalted butter
125ml boiling water

Butter and boiling water as needed for the syrup
Good quality vanilla ice cream

Combine the ingredients of the Malta pudding in a large mixing bowl along with the egg, jam, butter and boiling water. Pour the batter into mugs, just 3/4 of the way then place in a high sided roasting dish.

Pour hot water into the dish until it comes about half the side of the mugs before placing in an oven that has been preheated to 180C to bake for about 20 minutes or until the Malta is cooked through.
Prepare the sauce for the Malta as per the package instructions using the butter and water.
Once the Malva pudding come out the oven pour over the sauce and leave for 10 minutes giving the pudding a chance to absorb the sauce.
Serve with a large scoop of ice cream.
