Loaded Nachos

Ingredients
Corn tortillas

2 Tbsp vegetable oils
500g beef mince
Salt and freshly ground black pepper
1/2 can chopped tomatoes
2 Tbsp dried mixed herbs
1 Tbsp chilli flakes
1/2 can rinsed black beans
1 cup mozzarella, grated
1 cup cheddar cheese, grated
Guacamole for serving
Salsa for serving
Fresh coriander

Method
Cut each of the tortillas into quarters and set aside
In a medium pan, fry the mince and season until cooked
Add the tomatoes, spices and beans to the mince and set aside to cool
Place one-quarter of the tortilla on a prepared board and spoon the mince mixture onto a quarter of it and fold it in half
Place the filled nacho chips onto a lined baking tray and place into the oven for 30 minutes or until crispy
Remove from the oven and set aside to cool slightly
Place all the nachos into a tower on an oven proof plate and top with grated cheese
Place under the grill until the cheese has melted
Serve with guacamole, salsa and fresh coriander
