Lindt Choc Mousse

Lindt Chocolate Mousse
100 g water 
100 g glucose syrup or honey 
200 g Swiss classic Dark chocolate
200 g Swiss Classic milk chocolate 
400 g cream ( whipping )

In a saucepan bring to the boil the water & glucose syrup
Then add the chocolate pieces
Stir until a smooth, shiny ganache has formed
Whip the cream to soft peaks & temper in 1/3 first
Then fold in the rest. Set as desired
