Lime and coconut bliss bars

For the base
2 cups cake flour
1 cup brown sugar
2 limes, zested
1 cup butter, melted
a pinch of fine salt

for the filling
3 free range eggs
1T vanilla
1 X 385g can condensed milk
¼ cup brown sugar
½ cup cake flour
¼ cup Clover vanilla Bliss
4 cups desiccated coconut
3 limes, zested

Melted white chocolate, to drizzle (optional)
Preheat oven to 180C. Combine the flour, sugar, lime zest, butter and salt to form a pliable mixture before pressing into the bottom of a greased square or rectangle baking dish. Place in the oven to bake for 15 – 20 minutes or until golden and toasted. Remove to cool slightly.
Add the eggs to a large mixing bowl along with the vanilla, condensed milk and sugar. Once well combined add the flour and the clover bliss with the coconut and lime zest, mixing through to form a thick mixture.
Add the coconut filling to the cooked base, pressing into the corners. Return the dish to the oven to bake for another 30 minutes or until lightly golden on the top with the edges being more toasted. Remove from the oven and cool completely before cutting into squares and serving.
As a decorating option, drizzle melted white chocolate over, allowing it to set before serving.
