Lemony chicken grain salad

Lemony chicken grain salad
2 large chicken breasts, boneless and skinless
salt and freshly ground black pepper
2T extra virgin olive oil
200g fine green beans
2 X 250g Woolies golden medley
200g cherry tomatoes, halved
3 spring onions, thinly sliced
for the crispy kale
  200g kale
extra virgin olive oil to coat
salt and freshly ground black pepper to taste
for the dressing: combine
2 lemons, zested and juiced
4T roughly chopped parsley
3T extra virgin olive oil
1T raw honey
season the chicken with salt and freshly ground black pepper place on a baking tray along with the green beans and kale that’s been coated in olive and seasoned lightly.
Place in the oven to roast for about 10 minutes or until the kale is crispy. Remove the kale and allow the chicken and green beans to finish cooking about 5 minutes. Allow the chicken to cool slightly before thinly slicing.
Prepare the golden medley as instructed. Add the golden medley to a large serving bowl along with the sliced chicken, green beans, tomatoes and spring onions.
Drizzle over the dressing and toss through before adding the crispy kale as a leafy crouton
