Lemon and Herb Pork Chops

Easy to Cook Pork Steaks (Avg 800g)
For the trio of root mash
500g Butternut
300g Diced Sweet Potato
300g medium carrots, peeled and roughly chopped
3 tablespoons Butter
Salt and Pepper
½ cup Cream
Mediterranean olive oil
1 bag Mixed Green leaves
2 Avocado’s, diced
1 punnet Rosa tomatoes, sliced
½ cucumber, roughly chopped
Salt and pepper to taste
2 Limes, juice and wedges
Preheat the oven to 180’c. Place the root vegetables in a roasting tray, drizzle with olive oil and roast for 30-40mins until soft. At the same time remove the plastic cover on the pork chops and bake in the foil tray for 40mins.
Once the root vegetables are soft, remove from the oven and puree with butter, cream and salt and pepper.
Combine the ingredients for the salad, drizzle with olive oil, juice of 1 lime and salt and pepper to taste.
Serve pork chops with root vegetable mash, salad and lime wedges.
