
Lactose free cinnamon roll muffins
Muffins
1 ½ cups cake flour
Pinch of salt
½ cup castor sugar
2tsp baking powder
¾ cup Clover Nolac milk
1 egg
1tsp vanilla paste
40ml apple sauce
Topping
½ cup butter
½ cup Demerara sugar
1 Tbsp flour
1 ½ tsp cinnamon
Glaze
½ cup icing sugar
1-2 Tbsp Clover Nolac milk
½ tsp vanilla paste
For the muffins:
Preheat the oven to 180C and grease a muffin tray or line with muffin wrappers. In a large mixing bowl combine the flour, salt, sugar, baking powder, milk, eggs and vanilla . mix until smooth and fully combined.
Stir in the apple sauce and scoop the batter into the prepared tray. Fill to about 2/3 full not all the way.
For the topping:
In another mixing bowl cream together the butter, brown sugar, flour and cinnamon. Drop about a teaspoon of this mixture onto each muffin batter.
Using a tooth pick or a knife swirl the butter mixture through the muffins. Bake for 20-25 minutes until done.
For the glaze:
Whisk together all the ingredients for the glaze and drizzle over the warm muffins and serve.
