Kulfi or Mango Kulfi
Ingredients
1 cup mango purée (two medium sized mangos diced and puréed)
4 cups milk
1 cup cream
1/2 cup milk powder
1 cup condensed milk
1 tbs corn flour mixed in 2 tbs of milk
2 tbs almonds chopped
2 tbs pistachios chopped
2 tbs cashews chopped
1/4 tsp saffron soaked in warm milk
1/2 tsp cardamom powder
Method,
Heat milk in heavy based pot and bring to boil. Then take heat down to a medium
Add milk powder, cream, condensed milk, and nuts and simmer for 20min on low heat
As it thickens, add cardamom powder and saffron
Add cornflour slurry and cook for another 5min - the milk must coat the back of your wooden spoon
Leave to cool completely
Add mango purée and mix
Place into moulds and freeze for 4-5 hours before serving
Note: for normal Kulfi, just leave mango out
