Jordan’s BBQ Chicken pizza

For the dough: Combine and knead before resting for 1 hour
1 kg white bread flour,
1 teaspoon fine sea salt
2 x 7 g dried yeast sachets
1 tablespoon golden caster sugar
4 tablespoons extra virgin olive oil
650 ml lukewarm water
For the Toppings:
Raw tomato sauce:
4 Garlic cloves
2T tomato paste
Salt and freshly ground black pepper to taste
8 Chicken thing fillets
2T Extra virgin olive oil
Woolies Sweet smokey BBQ sauce
1 Fresh mozzarella ball
Basil leaves to garnish
Heat the oil over a medium heat. Add the Chicken to a pan and brown for 3 minutes a side or until well caramelised on both sides. Pour in the BBQ sauce and glaze as the chicken finishes cooking. Cook for another 2 minutes then set aside.
For the raw tomato sauce: Blend together until smooth and set aside.
Roll out the dough to the desired size and thickness before transferring to a baking tray that has been lightly greased. Top with the raw tomato sauce and finally add the chicken and cheese that has been torn.
Place in an oven preheated to 200’C. Cook until the toppings are slightly charred and the dough is cooked. Top with basil and serve.
