Jack fruit fried rice

3T canola oil
4 cloves of garlic, finely chopped
5cm piece of ginger, finely grated
1 green chilli, finely sliced
400g cauliflower rice
1/2 cup soy sauce
140g Woolies pulled jack fruit
1T black onion seeds
5T roughly chopped coriander
3 spring onions, thinly sliced

Heat the oil over a medium heat before adding the garlic, ginger and green chilli. Once lightly caramelised and fragrant add the cauliflower rice and toss in the pan combining it with the other ingredients.

Add the soy sauce and jack fruit and toss through the other ingredients until well combined. Scatter over the onion seeds, coriander and spring onions before adding to serving bowls, finish with an extra scattering of coriander and spring onion.
