Hot Cross Bun Flapjacks
Hot Cross Bun Flapjacks
Makes: 8 large flapjacks
2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon All spice
2 cups buttermilk
4 teaspoons melted butter
1 teaspoon vanilla extract
2 eggs, beaten
½ cup dried cranberries
8 tablespoons butter, for cooking
1 pack Streaky bacon
Maple syrup to serve

METHOD:
Fry streaky bacon until crisp. Place on paper towel to drain off excess oil and keep warm in the oven while you prepare flapjacks.
For the flapjacks:
Sift all dry ingredients into a bowl and add dried cranberries. Whisk all wet ingredients together before adding to your dry ingredients and stir until just combined, ensure you don’t overmix.
Heat a large pan and grease with butter. Add half a ladle full of flapjack mix to the pan and cook the flapjack until little bubbles form on the top of the surface and the bottom is golden brown. Flip and cook until the other side is golden brown.
Plate flapjacks with crispy bacon and a drizzle of maple syrup.
