Honey Nut latte Truffles

Honey nut latte truffles

1 cup Cream
2 sachets instant honey nut-flavoured latte
2 tablespoons almond nut butter
300g Dark chocolate, roughly chopped
Pinch of salt
1 teaspoons freeze dried organic instant coffee (optional for extra coffee strength)
100g ground almonds for coating
Cocoa powder for coating

Bring the cream to a boil over a medium heat. Once the cream is boiling add the sachets of coffee, the extra teaspoon of coffee if you prefer a stronger flavour and almond nut butter. Pour the cream over the chocolate and leave undisturbed for 3 minutes in order for the chocolate to begin melting. Slowly stir the chocolate until it has evenly melted, be careful not to over stir the mixture. Once all the chocolate has melted, place the truffle mix in the fridge for 1 hr to firm up. Scoop tablespoon size truffles and using the palm of your hands roll into balls and coat in the ground almonds or cocoa powder. Eat immediately or store in the refrigerator.
