Homemade potato chips with Clover Feta sauce

Homemade potato chips with Clover Feta sauce

 
Potato chips:
4-5 large potatoes
Oil, for deep frying
Salt and pepper
 
For the Feta dip
200g Clover Feta cheese
1 c Fresh Cream
1 tsp fresh lemon juice
1 tsp fresh basil, chopped
1 tsp fresh chives, chopped
Salt and pepper to taste
 
Potato chips:
Pre-boil potatoes until they have a medium consistency (test with bamboo skewer).
Remove from warm water immediately when done and slice potatoes.
Preheat oil on stovetop to a very high heat. Make sure you use enough oil to cover the potato slices and fry potatoes until crisp.
Remove and dry on paper towel and toss with salt and pepper to taste.
 
For the Feta dip
Add the feta cheese and half of cream to a blender until well combined. Whisk the other half  of the cream until thick consistency. Pour the feta mixture into the whipped cream and gently fold together. Add the herbs, salt, pepper and lemon juice and mix until well combined. Serve fried potato slices on bamboo stick with the whipped feta.
