Homemade cheese crackers

Homemade cheese crackers

2 cups Clover Mature Cheddar cheese, grated
½ cup Clover salted butter
½ tsp cayenne pepper/ chipotle seasoning
½ garlic powder
½ tsp onion powder
1 ½ cups cake flour
Salt and pepper

Preheat oven to 180C and line a baking tray with baking paper.
In mixing bowl or a food processor, combine the cheese and butter until light and fluffy. Add all the spices and mix.
Mix in the flour ½ a cup at a time still in the processor or using a spatula until well combined and a firm dough forms. If the dough is too stiff gradually add 1-2 tbsp of ice water to the dough until it reached the right consistency.
Turn the dough out onto cling wrap and shape into a medium sized log. Cover thoroughly and refrigerate for 30 minutes up to an hour.
Remove the log from the fridge and cut into 1 cm slices and place on the prepared tray , leaving a 2 cm space between each cracker.
Bake for 15 minutes or until light golden brown. Turn out onto a cooling wrack to thoroughly cool after baking
