Homemade burgers with tempura fries

1kg mince
Salt and freshly ground black pepper to taste
Woolies smoky BBQ marinade to glaze
About 150g cumin flavoured boerenkaas, sliced

For the jerk dressing
1 habanero, roughly chopped
1t ground cinnamon
1/2t nutmeg
1 orange zested and juiced
3 spring onions, roughly chopped
1t smoked chill flakes
1t tomato paste
Woolies burger mayonnaise
Woolies red leaf lettuce to garnish
tomato, thick sliced to garnish
1 red onion, thinly sliced to garnish
Sweet and sour pickled, to garnish
4 Ultimate hamburger buns, toasted in butter

For the tempura fries
Oil for deep-frying
200g - 300g baby marrows, cut into quarters (through the length to form buttons)
Woolies asian tempura flour
About 400ml soda water
Salt and freshly ground black pepper to taste
2T black sesame seeds

Add the mince to a large mixing bowl and season with salt and freshly ground black pepper to taste.
In a blender combine the chilli, cinnamon, nutmeg, orange zest and juice, spring onions, chilli flakes and tomato paste. Blend to form a thick paste. Add the spicy paste to the mince and mix through before shaping in 4 large burger patties, flattening them to create more surface area for extra caramelisation.
Heat a pan or griddle pan over a high heat before adding the patties and cooking for about 3-4 minutes aside, ensuring the patties are well caramelised and crusted.
Begin brushing the patties with the BBQ sauce, covering both sides before adding the cheese and allowing it to melt on the burger patty.
For the tempura fries: Heat the oil for deep frying. Coat the marrow with some of the tempura flour. Mix the remaining flour with enough soda water to form a batter that resembles a pancake batter. Season with salt and freshly ground black pepper and sprinkle in the sesame seeds.
Dip the coated fries in the batter then carefully place in the oil to deep-fry. Once crisp remove the fries and place them on absorbent kitchen paper. Season lightly with salt and pepper. Commune frying the remaining marrow fries in the same way.
Assemble the burger by adding some of the mayo to the base of the burger bun followed by the lettuce, tomato, onion and some pickles. Add the patty and finish with the top of the bun serve with the tempura fries and extra burger mayo on the side.
