High tea savoury & sweet choux

1 batch of ready-made choux pastries

WW Salmon with lemon and dill crème friache/fennel fronds
Juice and zest of 1 lemon
1 tub Woolworths Crème fraiche
fresh dill
salt and pepper
Mix together the crème fraiche with the lemon zest and juice. Season with dill, salt and pepper. Fill the choux with the crème friache. Top with salmon strips and garnish with more fresh dill

WW beef pastrami choux
1 pack WW Wafer thin beef pastrami
1 tub WW Sweet peppadew pepper flavoured dip
diced red pepper
butter lettuce (small ones)
Place a dash of the peppadew dip on the bottom of the choux. Top with baby lettuce and a slice of the wafer-thin beef pastrami. Garnish with diced rec pepper and fresh herbs.

Sweet  choux
1 pack malted puffs in milk chuckles
fresh cream
icing sugar
Whip the fresh cream with the icing sugar. Melt the chuckles in a saucepan. Dip the top part of the choux pastry into the melted chuckles. Fill the choux with the sweetened pastry cream. Garnish with edible flowers.
