Habanero maple hot wings

Habanero maple hot wings

1.5kg chicken wings, drums and flats separated
2 habanero chillis, finely chopped
1T dried thyme
1T garlic powder
1T onion powder
1T BBQ/Chicken spice
Salt and freshly ground black pepper
1 cup plain yoghurt
3 cups flour
Oil for deep-frying
3T butter
4T maple syrup
4T chipotle sauce
500g Woolies frozen potato rostis

Add the chicken wings to a large mixing bowl along with the habanero that has been finely chopped, thyme, garlic and onion powder, BBQ or chicken spice and finally a seasoning o salt and freshly ground black pepper.
Mix together coating the chicken well in spicy mixture before adding this yoghurt and mixing through. Add 2 cups of the flour and mix, coating the chicken before adding the final cup and tossing through again. Heat the oil for deep-frying.
Add the chicken to the oil and fry until golden brown and crisp then remove from the oil and place on absorbent kitchen paper.
Heat the butter in a pan, melting it before adding the maple and chipotle sauce. Mix the ingredients together before adding the chicken wings and tossing to coat in the glaze.
Prepare the rostis as per the instructions and serve with the chicken.
