Serves: 4
Preparation time: 15 – 20 min
Cooking time:  3hours
160g Beef mince 
Maldon Salt
Fine Black Pepper
Fresh picked thyme leaves
Basting Sauce
Red wine
Irish Cheddar 
Shape mince into pattie, season after with salt, pepper and fresh thyme.
Fry in pan or flattop on high heat for 2 mins on both sides, baste with sauce and cook both sides till medium.
Place cheddar on top, deglaze with red wine and cover till cheese has melted.   
Mushroom Cream Reduction
1 Garlic clove
100g Portobello Mushrooms
100ml Double cream
25ml Dry Sherry
Fresh thyme
Black pepper
Salted Butter 
Slice and fry mushrooms with butter in a pan on medium heat. Add chopped garlic and deglaze with sherry.
Add fresh picked thyme leaves and black pepper.
Add cream and reduce till thick
