Gingerbread latte whoopie pies

Gingerbread latte whoopie pies

115g unsalted butter
2/3 cup demerara sugar
1 Free range egg
1 teaspoon vanilla extract
¼ cup molasses
2¼ cup cake flour
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 teaspoon espresso instant coffee
1 teaspoon bicarbonate of soda
1 cup buttermilk
 
Cream Cheese Frosting
250g cream cheese, room temperature
100g unsalted butter, room temperature
2 cups icing sugar, sifted
 
Cream butter and sugar. Add the egg, vanilla and molasses. Combine all the dry ingredients and add it to the mixture alternating with the buttermilk.
 
Pour the cake batter into a piping bag and pipe equal size rounds, or spoon equal size mounds of the batter using a 1/8 cup measure, onto a lined baking tray and bake for 15 minutes.
 
To make the frosting cream the cream cheese and butter until light and pale, add icing sugar and beat until well combined. Pipe the frosting onto one half of the whoopie pie and sandwich together.
