Gherkin Stuffed Jalapeño Bacon Wrapped Chili Poppers

10-12 whole jalapeno pepper
230g cream cheese, softened
150g mozzarella cheese, grated
4-5 Rhodes Quality gherkins, diced
250g streaky bacon
3 eggs
1 cup flour
1tsp paprika
Salt & pepper
1tsp chilli powder
1tsp onion powder
1tsp garlic powder
2 cups bread crumbs
Oil for deep frying

Prepare the jalapenos by making an incision on the side of the pepper and use a spoon to scrape out the pith and seeds.

In a mixing bowl combine the cream cheese, mozzarella and gherkins. Stir until well combined, use a spoon to fill each pepper with the cream cheese filling. Wrap with bacon and allow to set in the fridge for 15 minutes.
Prepare the seasoned flour by combining the flour and spices in a bowl.
Place eggs in a bowl and lightly beat. Dip the peppers in the flour and allow to sit on a rack for 10 minutes before dipping into the egg and then into the breadcrumbs making sure that they are well coated, coat with the flour and breadcrumbs twice.
Heat your oil in a pot and fry pepper 3 at a time until golden brown. Drain on some kitchen towel. Serve hot with a side of sweet chilli sauce.

10-12 Rhodes Quality Gherkins, sliced into rounds
1 egg
½ cup milk
1Tbsp Sriracha sauce
1/2 tsp Worcestire sauce
½ cup flour, divided
¼ cup Rhodes Quality Southern Coating or Rhodes Quality Chili Bite Mix
½ tsp garlic powder
½ tsp onion powder
Salt & pepper
Oil for deep frying


½ cup mayonnaise
¼ cup sour cream
¼ cup buttermilk
¼ cup fresh parsley, chopped
2 garlic cloves, minced
2 salad onions, finely chopped
1Tbsp dill
Pinch of smoked paprika

Lay the gherkin rounds on some paper towel and pat dry. In a bowl whisk together the egg, milk, sriracha sauce, Worcestershire and half the flour.

In another mixing bowl combine the remaining flour, Southern Coating/ Chili Bite Mix and spices.
Dip the dried pickles into the batter then dredge into the panko mixture to making sure to coat completely. Allow to sit while the oil heats up.
When the oil is ready fry the pickles in batches until golden brown, drain on some paper towel.
For the dressing mix all the ingredients together and serve with the deep fried pickles.
