Gammon and brie toasted sandwich with green fig preserve

Gammon and brie toasted sandwich with green fig preserve

Crushed wheat sourdough bread, 6 slices to make 3 sandwiches
2 X 125g brie cheese, cut into sliced
100g green fig preserve, thinly sliced figs and some of the syrup reserved
about 30og thinly sliced gammon
4T butter

Place the bread down on a work surface, add cheese to 3 of the slices, followed by the figs, some of the syrup and then the gammon, add the top slice to complete the assembly of the sandwich.
Add some butter to a pan over a medium heat and melt before adding the sandwich to the pan. Toast until golden and crisp before turning over and cooking the other side in the same manner.
Half the sandwiches and serve hot.
