Fruits of the Forrest rusks

Fruits of the Forest rusks

Makes: 25 rusks
Prep time: 3 hours


Ingredients
500g self-raising flour
2 ½ cups oats
½ tbsp. baking powder
125g butter
½ cup sugar
1 egg
150g Fruits of the forest, any flavour
¼ cup milk
Pinch of salt
30g dried apricot
30g dried figs
2 tbsp poppy seeds


Method
Preheat oven to 180C. Mix all the dry ingredients. Melt the butter and the sugar, you can use a microwave. Beat the eggs, Fruits of the Forest and milk together and add to the egg and butter mixture.
Mix in with the dry ingredients. If your mixture is too dry, add a little milk. Spoon the batter into lightly greased loaf tins and bake for about 1 hour. Then remove from the oven and cool.
Cut the loaves into rusks using a sharp bread knife and pack out on baking trays. Dry at 80C while turning the rusks every hour or so. When they are hard to the touch, cool and store in an air-tight container.
