
Fruits of the Forest fritters

Ingredients
1 cup Fruits of the Forest with cereals: Guava
3 eggs
2 teaspoons sugar
½ tsp salt
1 tsp vanilla extract
½ cup dried guava, chopped
1 ¾ cups self raising flour
Oil (for frying)
Icing sugar (for dusting)
Method
Whisk the eggs in a mixing bowl, add the Fruits of the Forest and mix well.
Whisk in the sugar, salt, vanilla and choppped dried apricots.
Sift in the flour, gradually beat into the egg mixture. Beat well until thick.
Heat the oil in a frying pan. Scoop spoonful’s of the mixture into the hot oil and fry for 20-30 seconds on each side until golden brown.
Drain on kitchen towel and sift icing sugar over the top.
